Bedmi poori


Bedmi Poori Aloo Subji

Prep time - 40mins

Cooking time - 40mins

Makes 12 poories (25gm each)


Ingredients:

For Poori Dough 

Atta (whole wheat flour) - ½ cup or 60gms

Maida (all-purpose flour) - ½ cup or 60gms

Sooji (semolina) - ⅓ cup 60gms

Salt - a generous pinch

Ajwain (carom) - ½ tsp

Kasoori methi (fenugreek) - 1tsp

Oil - 1 tbsp 

Ghee - 1tbsp 

Water - 50ml approx



For Bedmi Stuffing 

Urad Dal - ¼ cup 

Salt - ½ tsp

Black salt - ½ tsp

Saunf powder (fennel) - 2tsp

Heeng (asafoetida) - ½ tsp

Green chilli chopped - 2nos

Chilli powder - 1tsp

Amchur powder (mango powder) - 2tsp

Coriander powder - 1tbsp

Garam masala - ½ tsp

Turmeric - ½ tsp

Water - 4-5tbsp approx

Oatmeal Peanut Butter chocolate chip scone

 Ingredients

All- purpose flour -  2 cups

Dark brown sugar - 1/3 cup 

baking soda - 1tsp

Baking powder - 1 tsp

salt - 1/4 tsp

oats - 1 cup

butter - 3/4 stick

Buttermilk - 3/4 cup

egg (separated)- 1 large

peanut butter - 1/2 cup

chocolate chip - 1 cup 

sugar -- 2 tbsp

powder sugar - 1/4 cup

Recipe

Preheat oven to 400 degree F  and prepare the dish 

In a bowl, whisk flour , baking soda, baking powder, salt and oats 

Add butter and rub the mixture with fingertips until butter is pea sized and and mixture looks like chunky coarse meal .

In another bowl, whisk buttermilk and egg yolk until combined 

mix dry and wet ingredients until combined 

Add peanut butter to the mixture

Use clean floured hands to make dough until it starts to come together . Do not overwork.

Add chocolate chips to the dough 

Make disk shape and place it on the prepared pan . Cut wedges and brush eggwhite

sprinkle powder sugar

bake for 18 - 20 minutes rotating every 5 minutes 

let it cool for 5 minutes and enjoy

Oatmeat resin pancake

  Ingredients

All Purpose flour- 3/4 cups

Whole Weat flour - 3/4 cups

Oatmeal - 1/2 cups

Salt - 1 tsp

Baking powder - 2 tsp

Brown sugar - 1/2 cup

Eggs -2 

Raisin - 3/4 cup

milk - 2 cups

Butter - 3 tbsp

vanilla extract - 1 tsp


Method:

Step 1 - Warm milk , vanilla and butter and keep aside

Step 2 - Keep eggs in warm water for 10 minutes

Step 3 - Combine oatmeat , allpurpose flour , whole wheat flour , baking powder, sugar and raisin in a large mixing bowl .Whisk and keep aside

Step 4- Whisk egs in a seperate bowl for 5 minuttes

Step 5 - Add milk mixture to the flour mixture and fold

Step 6 - fold in eggs 

Step 7 - pour 1 vcup mixture on the pan. Flip it when it is done from one end 

Serve with maple syrup and butter

Eggless frenchtoast



For a long time, the only kind of French toast I had was the Savory herb flavored toast made with white bread dipped in Savory mixture of egg, chopped onions and tomatoes and shallow fried to bring out the crisp and soft toast. This is what I had been preparing at home for years till I saw the french toast in the IHOP menu and was presently surprised by the taste.yet I never prepared the sweet variety of the toast. 

Last weekend I went strawberry picking with family and got carried away. The sweet juicy strawberries straight out of the farm are simply too good to resist and strawberries kept adding up to our box. Each time we decided to stop, we saw a mouthwatering strawberry hanging on a bush. We ended getting more than we could consume. 

I don't like throwing food away so I was determined not to throw my strawberries away. My love for strawberries landed me 
To the pinterest of strawberry breakfast and I stumbled upon frenchtoast topped with strawberries.

The strawberries are in the batter and as the topping. I squished the chopped berries and mixed it to the batter to get the strawberry flavor and sliced it for the topping. The strawberries topped on the toast makes it simply irresistible. Other fruits like mango, blueberries and Raspberry could be a good alternative 


I have used flaxseed as egg replacement in this recipe. I generally use 1 tbsp of Flax seed and 3 tbsp of water and a pinch of baking soda as replacement of 1 egg. This time, I did not use baking soda. 
The flaxseed makes the batter sticky to stick to the bread. 

Chia seeds add extra crunch to the toast. They need to be soaked for about 20 minutes before preparing the toast. With the health benefits. These seeds have become quite popular recently among weight watcers for all the fibers and protien. They swell up to little gel balls and can be used to thicken the batter 

I have already used flaxseed and chia seeds in the recipe and now I didn't want to kill the 'healthy' part by adding sugar. I have used pure maple syrup as sweetener. Just one spoon has enough Sweetness. 

Serves - 4 ( 12 slices)

Recipe 

Ingredients 

Batter
Milk - 1 cup 
Flax seed - 3 tbsp 
Chia - 2 tbsp ( soak 2 tbsp chia seeds for 20 minutes)
Water-1/2 cup to soak chia
Salt- 1 pinch 
Strawberries ( chopped and squished) - 5-6
Maple syrup - 1 tbsp ( or 2 if you want it sweeter)

Toast
Bread slices cut diagonally - 6 slices 
Oil for frying 

Topping 
Banana - 1 
Strawberry -4 

Preparation :
Soak chia seeds in water for 20 minutes 

In a medium bowl, add milk,chia,Flax seed,salt, maple syrup and crushed strawberries and give a stir to combine 

Put the oil in flat frying pan for heating. 

In the meanwhile,Cut bread in half diagonally and keep aside 

Check the oil by putting a small bread crumb in it. If the crumb is browned as soon as it goes in oil, we can start Dip bread in the batter. Make sure that the bread is covered properly and immediately put in frying pan. Flip sides when one side I'd crisp

Remove from pan when both sides are done.Arrange in a plate and top it with sliced banana and strawberries
